Obv I can't prove anything, but my gut is that Apple massively reconfigured their algorithm for Apple Fitness challenges early in 2022. The last few challenges I had in 2021 were INSANE and one of them I only accomplished because, frankly, I was on vacation and hiking a lot and so I was covering the distances that the challenge needed me to cover per day
Onthe Activity app on the Apple Watch tap the Awards icon on the lower right corner of the screen. That’s where I’m seeing only past attained challenges, not the current. All the challenge should be there, current and past ones. I wish I could get my watch to do screenshot. The current challenge is just not there.
